KETO Cranberry Holiday Bars

Cream cheese and cranberries

INGREDIENTS 

 Crust

  • 3 Tbsp Softened Butter

  • 2 Tbsp & 2 tsp Swerve Sweetener 

  • Pinch of salt

  • 1 Egg

  • 1/2 tsp Vanilla

  • 1/4 tsp Orange Extract

  • 2 Tbsp Almond Flour

  • 2 Tbsp Coconut Flour

  • 2 Tbsp Ground Golden Flax

  • 1/2 tsp Baking Powder

  • 1/2 Cup Fresh Cranberries 

  • Additional 1 Tbsp Swerve Sweetener

Cream Cheese Frosting

  • 4 oz Softened Cream Cheese

  • 1 Tbsp Softened Butter

  • 1/2 Cup Powdered Swerve Sweetener

  • 1 tsp Vanilla 

  • 1/2 Tbsp Heavy Cream

  • 1/4 Cup fresh Cranberries 

DIRECTIONS

  1. Preheat oven to 350 Degrees Fahrenheit and Grease an 8 x 8 baking pan.

  2. In a Stand Mixer, cream together softened butter and Swerve sweetener until smooth. Add in egg, vanilla, and orange extract. Mix until well combined.

  3. In a separate bowl combine both flours, flax, baking powder and salt. 

  4. Add the dry ingredients to the wet and mix well.

  5. Using a food processor chop up 1/2 Cup fresh cranberries and the additional 1 Tbsp Swerve sweetener.

  6. Fold cranberries into prepared batter.

  7. Place batter into prepared baking dish and bake for 20 minutes until golden brown. 

  8. Let cool and place in fridge. 

  9. For the Cream Cheese Frosting, mix together cream cheese and butter until smooth. Mix in powdered sweetener and vanilla extract. 

  10. Using a food processor chop up 1/4 Cup of cranberries and then fold into cream cheese frosting mixture. Spread frosting onto the cooled bars. 

  11. Refrigerated prepared bars until cooled, cut into squares and serve!
