Kinsley’s LOL Surprise 5th Birthday Party

November 4th Kinsley turned 5!

Not exactly sure how that happened, well I do, but time just goes by too fast. I still remember the day we brought her home and when we walked through our front door for the first time as a family of three. It was a big change from what we were used too, but it was sure exciting being new parents. These past five years with this sweet, kind hearted, adventure seeker have been amazing. From watching her take her first steps, to surfing behind Opa’s boat, learning to ride her dirt bike and now playing her first year of hockey, Kinsley is one exciting little girl too be around.

November 5th we got to celebrate Kinsley at her LOL Surprise Birthday Party!

Valentines Day Cookie Kits

Need a fun activity to do with your loved ones for Valentine’s Day?

Kinsley and Paisley sure had fun decorating their Valentine’s Day cookies, but I’m pretty sure they enjoyed eating them even more!

Cookie kits are great for any occasion, such as birthday parties and holidays.

KETO Zucchini Cheese Bread

INGREDIENTS

  • 3 zucchini’s (about 4 cups shredded) 

  • 2 Large Eggs

  • 2-3 Cloves Garlic

  • 1/2 tsp Dried Oregon 

  • 1/2 tsp Dried Parsley

  • 3 Cups Shredded Mozzarella Cheese (Divided) 

  • 1/2 Cup Fresh Parmesan 

  • Salt 

  • Pepper

  • Pinch of Red Pepper Flakes 

*Serve with Marinara Sauce 

DIRECTIONS

  1. Preheat oven to 425 Degrees Fahrenheit and line a baking sheet with parchment. 

  2. Grate zucchini, and using a dish towel, wring out moisture from the zucchini.

  3. Place grated zucchini into a large bowl with eggs, garlic, oregano, parsley,

    1 1/2 cups mozzarella, Parmesan, and season with salt and pepper. Stir until completely combined.

  4. Transfer zucchini dough to prepared baking sheet and form into a crust. Bake until golden and dried out about 25 minutes.

  5. Sprinkle with remaining mozzarella and red pepper flakes, and bake for an additional 10 minutes until cheese is melted. 

  6. Slice up zucchini cheese bread and serve with marinara.

  7. Enjoy!

KETO Mexican Cabbage Skillet

Ingredients

  • 2 lbs Ground Turkey or Chicken

  • 1 Medium Cabbage

  • 1 Yellow Onion

  • 1 Cup Mushrooms

  • 1 Green Bell Pepper

  • 2 Tbsp Olive Oil

  • 1, 796ml Can Crushed Tomatoes

  • 1 Pack Taco Seasoning

Directions

  1. In a skillet brown the ground turkey or chicken.

  2. Chop up the cabbage, onion, mushrooms, and green bell pepper and set aside.

  3. Once ground meat is cooked, remove and set aside in a separate bowl.

  4. Using the same skillet pour olive oil, and all the chopped up ingredients and cook on medium-high heat for about 10 minutes until tender.

  5. Add the cooked ground meat back into the cabbage mixture, pour in the can of crushed tomatoes, and pack of taco seasoning. Mix well, then cover and let cook for an additional 5-10 minutes.

  6. Top with shredded cheddar cheese and sour cream, Enjoy!

Note: For a little added spice add in a jalapeño

KETO Cheddar Biscuits

INGREDIENTS 

  • 2 Cups Almond Flour

  • 2 tsp Baking Powder

  • 2 tsp Garlic Powder

  • 1/2 tsp Pink Himalayan Salt

  • 1 Large Egg

  • 1/3 Cup Heavy Cream

  • 1/3 Cup Butter

  • 1 1/2 Cups Shredded Cheddar Cheese

DIRECTIONS

  1. Preheat oven to 350 Degrees Fahrenheit, and line a baking sheet with parchment paper.

  2. In a large bowl mix almond flour, baking powder, garlic powder and salt.

  3. In a small separate bowl whisk egg, then add to flour mixture. Add cream and melted butter and mix until combined. 

  4. Fold in cheddar cheese, do not over mix.

  5. Form biscuit mixture into 12 balls and place on prepared cookie sheet. Flatten balls to form a biscuit shape. These will spread a bit during baking.

  6. Bake biscuits for about 12-14 minutes until golden brown and semi-firm to touch.

  7. Serve warm or cooled and enjoy!
